The shincha organic premium, just like the sencha organic premium, is not infused too hot if you want to avoid bitterness and astringency. If it's hot, a long cold infusion in the fridge at 5° will be welcome. The infused leaves of these teas have the particularity of being excellent to eat with a few drops of soy sauce and toasted sesame oil that bring Japan to your plate.
