This tea really does have a great balance between the umami flavors of gyokuro and the more vegetal layers of sencha. It's a rich and dimensional brew that is probably the best tea I've had so far (I've ordered quite a few from hibiki-an already as well as other companies). No doubt the intensity of the flavor is partially because of the freshness of the new shincha harvest, so take advantage of the season! I'm curious now to try other shincha teas to see how they compare. They say that shincha can be brewed with a higher temperature for a more refreshing flavor but I have not tried that yet. I'll be sure to do so, just for a change of pace. |
