First look of the fruit upon unwrapping is the muted peach-brown coloring of the wrinkled fruit skin, and also wet from the juice in the wrapping. Its flesh is very soft to the touch. First bite gives an instant saltiness in taste, followed by mild sourness and sweetness. The flesh feels juicy and very velvety on the palate, it simply just melts on the tongue. I find the flavor much more friendly, given the addition of sweetness, compared to the typical umeboshi in general which usually extremely salty and sour. I notice the skin of this fruit is very thin, holding in its juicy flesh and its seed, and easily torn/peeled away from the flesh simply with the maneuver of the tongue. Japanese green teas are suitable to cleanse the palate after eating this, but I somehow feel like this ume would be equally good to accompany steamed rice, rice porridge, onigiri and ochazuke.  |
