UME plum is one of the traditional and best-known Japanese fruits. The size of each plum is quite large, which is a sign of its high quality and premium grade, and its flesh is so juicy and chewy. The aroma and taste are well balanced, and they linger in your mouth for a long time. Many people outside Japan have only tried UMEBOSHI, which can be rather sour or salty, but we Hibiki-an selected this sweet and fresh UME confection which pairs well with Japanese green tea.
This confection is unique because salt is not used to soak UME plum, but only sugar and apple vinegar are used to make this plum glace. Artificial flavorings are not used, so that only the natural plum flavor and taste amuses your mouth.
Our UME plums are grown in Wakayama Prefecture, which is famous for its plum orchards. Especially, plums in this area are called NANKOH UME, which is considered the highest quality plum. The size of plum glace is so large that it has a chewy texture. The plum flesh is very soft and juicy, and its fresh sour taste lingers in your mouth for a long time.
One of the focal points of this confection is plum flesh. Only fully ripened plums are used to produce this glace. As the plum ripens, the color of its skin turns yellow, aroma turns sweeter, flesh gets softer, and sugar content becomes higher. Fully ripened plums have a slightly sour and rich fruity taste. Adding to that, glace syrup of sugar and apple vinegar enhances its natural fresh plum taste. Plump plums are soaked in two or three months, and the sweet taste of plum is condensed in the unique glace syrup. The combination between mild acid taste of plum and noble sweetness of glace syrup is well balanced, and the natural and sophisticated taste expands in your mouth.
