UME plum is one of the traditional and well-known Japanese fruits. Many people outside Japan have only tried UMEBOSHI, which can be rather sour or salty, but we Hibiki-an selected this good balance of salty and sweet UME confection which pairs well with Japanese green tea. This confection is unique because it includes domestic HACHIMITSU honey. Usually, honey is not used to make UMEBOSHI, but soaking UME plums in honey creates a mild taste. The plump UME is very juicy and has an amazing flavor. You can enjoy the harmony of moderate saltiness and sweetness.
Our UME plums are grown in Wakayama Prefecture, which is famous for its plum orchards. Especially, plums in this area are called NANKOH UME, which is considered the highest quality plum. The plum skin is so thin that it has a gentle and smooth texture. The plum flesh is very soft and juicy, and its fresh sour taste lingers in your mouth for a long time.
The most interesting point on this confection is its complicated rich taste. The plums are soaked in honey syrup. This soaking process adds sweetness to the flavor. The exquisite combination of sour, salty and sweet taste creates this noble and premium plum confection.
Japanese pickled plums are separated into five grades according to their quality, and all the plums used in our HACHIMITSU UME are of the highest grade, Special A.
