This matcha is quite modest, even in its title, which is simply, Organic Matcha. In recent times, it might be true to say our expectation is that matcha will have a refined, mellow flavour, with little or no astringency. Yet, this matcha has a certain, though not overwhelming, old-fashioned astringency, which brings to its character both humility and simplicity, two essential qualities in the practice of Chado, The Way of Tea. |
