YOHKAN is a traditional Japanese confection made primarily from sweet red bean paste to create a firm or jelly-like block. It is well known with various types of seasonal YOHKAN found throughout the country.

KAKI refers to persimmon in Japanese. This YOHKAN uses persimmon grown in Nara Prefecture, not sweet red beans like regular YOHKAN. It is made with no water and uses persimmon juice as much as possible. The rich juice of persimmons is condensed in the block of YOHKAN and you will be astonished by how one bite tastes like when you bite into a real ripened persimmon. Each piece of YOHKAN uses about three FUYU persimmons, resulting in a refreshingly clean sweetness and the soft texture that is so popular in Japan.

The whole YOHKAN feels heavy but when you slice it for tea time, you will see the light and bouncy jelly-like texture that almost melts in your mouth. Sometimes you feel persimmon flesh adding texture that delights your tongue. The rich juice of persimmons brings you a well-balanced sweetness and refreshing fruitiness. The FUYU persimmon is Japan's most widely produced persimmon. Compared to other types, it boasts a superior texture and higher sugar content, being called the “King of Sweet Persimmons.”

The manufacturer is a persimmon specialty shop that is located in Nara Prefecture. In the days when the only options were fresh persimmons and dried persimmons, they felt a sense of crisis at the reality of persimmons that are just “not good enough” being discarded every day. They saw the potential in persimmons. They contain various nutrients including vitamin C, carotene, and potassium. There is an old saying in Japan: “when persimmons turn red, doctors turn pale,” revealing how persimmons were considered a special health food in the past.
