MISHIMA MAME comes from the last name of the founder, Jihei Mishima. MAME is the Japanese word for beans. MISHIMA MAME is made from local Hida soybeans grown in high-quality natural water. Jihei Mishima researched soybeans from all over Japan and carefully selected the best soybeans for MISHIMA MAME. When roasted, the beans turn out crispy and have the natural sweetness of soybeans.

In order to maximize the softness of the soybeans, they are roasted after being soaked in spring water for more than a day and night according to the seasonal temperature and climate. Even today, charcoal fire is still used in the process. The soybeans are roasted, covered with layers of sugar and starch, and then dried to finish. The sugar on the MISHIMA MAME is carefully coated and dried over and over again, more than a dozen times. It takes a total of five days to make the product, and the process takes a lot of time and effort.

The rugged appearance of the surface of MISHIMA MAME is a testament to the fact that they are coated and dried many times using charcoal fire instead of gas or steam. The beans coated in green laver accent the flavor and continue a tradition of using laver to preserve dry foods in the days before modern desiccants.

MISHIMA MAME have always been sold in an oval can. The cute retro packaging has been very popular. The horse seal on the package is a symbol of prosperity, based on the legend that many famous horses came from the Hida region.
