YATSUHASHI is a type of traditional Japanese SENBEI hard-baked cracker. It is made by baking the dough consisting of rice flour, sugar and cinnamon powder that has been rolled out thin and cut into the shape of the KOTO Japanese traditional harp, which is a rectangle convexly curved symmetrically to the longer axis. It has an airy texture and slightly sweet taste.

There are several views on the origin of the name YATSUHASHI. The most prevalent theory is that YATSUHASHI is derived from the name of Yatsuhashi Kengyo (1614–1685) who is known as most famous ancestor of KOTO Japanese harp player. It is said that YATSUHASHI SENBEI was made after his death to honor this achievement.
