Our KUROMAME black soy beans are one of the most famous black beans grown in the middle part of Kyoto prefecture, and soy beans produced in Kyoto prefecture are known to be of premium quality. Each black bean is carefully selected and picked by hand to ensure there is no damage. The entire process is done by hand with a great deal of time and care. Parboiled beans are soaked in Japanese SAKE, which is made from famous natural spring water in Kyoto. After soaking for a specified time, the beans are dried and coated in sugar. Well selected local raw ingredients create a noble and premium flavor and texture.
