Our Organic Sencha Premium is certified by the Ministry of Agriculture, Forestry, and Fisheries of Japan. They are grown with only natural organic fertilizers and no agricultural chemicals or pesticides.
In Japan, we say "Daichi tono Kakutoh" to describe traditional organic farming. "Daichi tono Kakutoh" means that it takes a lot of time and great effort to grow organic green tea. There are only a few farmers that produce organic green tea in a small part of Kyoto. (For more information, click here.)
Although Japanese green tea is harvested two to four times throughout the year, we can realistically harvest high quality organic tea only once a year due to lack of nutrition caused by limited use of fertilizers. Many Organic Japanese green tea are harvested two to four times throughout the year, so unfortunately the taste and aroma are not excellent.
Our Organic Sencha Premium's tea leaves are sprouts that are small and soft and not fully-grown. The tea leaves are gathered when the tree has only three sprouts. It is said that because the sprouts are younger, the aroma and taste is much more mellow.
Generally speaking, it is difficult to bring out a mellow flavor and ideal astringent aroma from Organic Sencha. However this special tea has both of these characteristics, brought about by geographical features of the Ujitawara region in Uji, which is known as a central area of rare high grade Sencha production.
Long ago before modern agricultural chemicals and techniques, the best Sencha must have been similar in taste and aroma to this fine organic green tea.
Please enjoy the simple and traditional taste of our Organic Sencha Premium.
