AME is a Japanese traditional candy that is popular and well-loved. We paired premium traditional candies, ITO TEMARI and Matcha AME, which are both manufactured with special efforts by traditional methods. ITO TEMARI AME looks very cute and the flavor is elegantly acidic (citrus). Matcha AME features the mellow taste and noble aroma of Matcha.
AME was first created in the 8th century from rice syrup. In the 17th century, confectioners began to shape AME into motifs such as animals, birds, and plants; this is known as SAIKU AME. AME candy was very precious and only court nobles or wealthy samurai families could afford it. Though it was popularized in the 20th century, certain shapes and flavors of AME are still prized.
ITO TEMARI, which is one kind of SAIKU AME is in the motif of ITO TEMARI traditional decorated ball. It requires high level technique and much effort to manufacture ITO TEMARI AME. It is quite difficult to create uniform fine lines and to control the temperature and texture of the ingredients during the manufacturing process. Indeed, our ITO TEMARI AME is made by two craftsmen, each with more than 15 years of experience. Therefore, most manufacturers hesitate to produce SAIKU AME candy like ITO TEMARI.
Plenty high quality Matcha is used for our Matcha AME in order to bring the graceful mellow taste and noble aroma. Often Matcha used in candy and food items is of lower grade, but this Matcha is premium quality, a suitable grade for drinking. Our confectioner doesn’t use artificial flavoring chemicals at all, though many manufacturers use low quality Matcha and artificial flavorings. It is the reason why our Matcha AME has such a graceful mellow taste and noble aroma.
