MIZU YOHKAN and KUZUKIRI are classic Japanese traditional confections for the summer season. Elaborately cooked AN bean jam of MIZU YOHKAN is placed inside a TAKEDUTSU bamboo tube, which creates a noble atmosphere. Juicy and fine crushed texture of MIZU YOHKAN evokes the arrival of summer. The shape of KUZUKIRI is like noodles, and its smooth and springy texture is a sensory delight. You will be pleased with the premium harmony of KUZUKIRI and the subtle sweetness of KUROMITSU syrup. Chilled MIZU YOHKAN and KUZUKIRI are very refreshing.

The difference between MIZU YOHKAN and YOHKAN is its water content. MIZU YOHKAN has a higher moisture content than YOHKAN, and the texture is quite juicy. The fresh water bean jelly, as it breaks apart in the mouth, is a sensory delight. Plentiful moisture does not sacrifice the AN flavor. Rather, its watery texture expands the original AN bean flavor in the mouth.

KUZU means arrowroot, and KIRI means cutting. KUZU arrowroot is dissolved into water, and set into a board shape during cooling, after which it is cut into long, thin noodles. The unique texture has been appreciated for some generations, through the ages. The balanced firmness and unique elasticity is remarkable. Translucent color brings to mind a sense of refreshment.

Serving

If you prefer, you may cool MIZU YOHKAN and KUZUKIRI in the refrigerator for a short time just before eating.
Since the shape of MIZU YOHKAN is long, try slicing MIZU YOHKAN into two or four equal parts per piece.
KUZUKIRI is suitable for one to three persons to eat.

Instructions

MIZU YOHKAN

1. Peel the seal and prepare a dish on which to place the MIZU YOHKAN.
2. Bend the projection part on the bottom of the bamboo tube, and MIZU YOHKAN will slide out.

If it is difficult to take MIZU YOHKAN out of the bamboo container, please use a toothpick or similar tool to let air into the bamboo container.

Cooling MIZU YOHKAN in the refrigerator for a short time will intensify the flavor.

KUZUKIRI

1. Peel the seal and prepare a dish on which to place the KUZUKIRI.
2. Compress and push KUZUKIRI by using a stick slowly.
3. Baste the KUROMITSU syrup over the KUZUKIRI before eating.

Please open the syrup bag with great care to avoid spills.
Cooling KUZUKIRI jelly in the refrigerator for a short time will intensify the flavor.
